Multiple Desktop Setup (HTPC/Home Server)

I'm sorry if this has been asked before, I'm just really lost at what to search for.

Anyway, I want to setup my HTPC in the following way:

  • One Desktop environment configured for TV accessability (big font and such) also used for an optional media center application (for easy streaming/video playing)
  • One "normal" desktop accessible over vnc

  • The physical display should never be able to show the "real" vnc desktop, even with ctrl-alt-F* keys

I suspect some sort of vnc-virtual desktop config? How would one configure this?
